Park [Montreal - Japanese]

Finally made it to Park Restaurant (@Restaurant_PARK) back on our April Montreal trip, have been dying to new Montreal Celebrity Chef Antonio Park (@ChefAntonioPark) restaurants.










We opted for the $105 Omakase Tasting Menu.
Since there was 5 of us, we wanted to be able to chat a bit, so we opted for a table instead of my usual preferred seat at the sushi bar (I just love watching people cook). Executive Chef Antonio Park was a Korean born in Argentina, trained in the Culinary Institute of Japan and having work at restaurants all over the world including New York's three Michelin Star Masa. Oh did I mention his amazing instagram photo of all the sashimi and nigiri looks amazing, so you know how excited I was.


Nihonsakari Dai-Ginjo Skae $ 45.00



Chicken Consomme 
~ w/ Ginger & Daikon
Although this was delicious, we all agreed that the flavors were too strong and salty to start off the meal.


Red Snapper 
~ w/ Ponzu Sauce, Crispy Ginger & Marinated Cabbage
Hate to say it but it was way overcooked although the skin was perfectly crispy and the sauce was just amazing.


Sushi (4 portion)
~ Hirame w/ Mujol
~ Kaimin Tai w/Arima Sancho
~ Shima Aji w/Ginger Scallion 
~ Albacore w/Shiso Pepper
~ Kampachi w/ Chimichuri
~ Torched Sake w/Maple Basil Sesame 
Hamachi w/ Benitade & Jalapeno
Love all the one of a kind combination of fish and sauce/topping, it's definitely not you typical sushi and perfectly executed.



Maki
~ Flying Fish, parship & avocado, Mizuna, pinenut sauce w/ Albacore Tuna
It's just too pretty to eat, love the slight difference between each piece and note that this was a one person portion. But thought some of the sauces overpower the fish just a bit.



Sashimi
~ Salmon Belly, Yellow Stripe, grilled Albacore, Rencodi Yellow Eye Seabeam, Draft Peach soaked in truffle, marinated tozasu sauce.
At first glance I was a tad skeptical having the fresh sashimi sitting on top of same sauce, wouldn't the sauce overpower the fish??? But after the first bite, all my skepticism went away. The light refreshing was anything but overpowering, it was so light and complimented the fish so perfectly and yup I did lick my bowl clean.


Beef Teriyaki Don $ 29.00
This was ordered for the 5th person who can't eat raw fish, it was actually super delicious with all the veggies and love how instead of rice, they use a mix of wild rice and quinoa. This was so good although wish the beef wasn't as well done as it was, it was still delicious. 


Bread Pudding w/ Maple Syrup Caramel
Love the presentation and flavors here but it was rather dry.


We had an early dinner since we still needed to drive back to Toronto but by the time we left, the place was packed.


Love seeing that the chef himself is still working the kitchen.


Verdict:
It was a great experience and would love to come back.
Love all the unexpected sashimi topping combination, definitely not your average sushi bar.
Super fresh ingredients and perfect execution.
Friendly attentive service although long wait between dishes but creating art like these takes time.
Saw other people had a \trio of Uni dish for their omekase and I was so disappointed that we didn't get that.
